2am:dessertbar


Ever since I missed out on Janice Wong at Sepia event during the 2010 SIFF, I have made a promise to myself, no matter what, rain, hail or shine (or something like that), I HAVE to visit her dessert bar when I'm in Singapore next !

Due to my super lack of blogging, this trip was back in March this year - since they do change their menu quite frequently, some of the desserts in this post might not be on it anymore.


The bar was open at 4.00pm back then, now they open from 6pm - we (read : I ) booked a table for 3 of us at that time - just so I can get decent natural light for the photos ho....ho...ho...ho...

The location is not exactly the easiest place to find for us non local people, our taxi dropped us off near the main road and it was up to us to find where it is.
The entrance is on the side of the building then you have to walk up the stairs, honestly, I though we were walking up the wrong place as it was as if the place is not open - but it was ! *phew*

As we found out later, usually people turn up when it's dark, not in broad daylight and in the time slot of neither afternoon tea nor early dinner. Then I had to explain about the blog, the photo and all was good and we escaped the possibility of being classified as weirdos. 

Seatings

As there was practically no one else beside us 3, we were told to sit anywhere we like by Derrick, who prepared the desserts for us. 
While the white leather lie back lounge looks so comfortable, it was unanimous that we should perched ourselves on the tall (we shorties had to climb up) white leather bar tools by the open kitchen so we can see all the sweet actions !

Hot or Cold Water ; Da Gadgets

At 2am:dessertbar you have the options of pairing your desserts with wine/cocktails - this place is a bar after all ^_^
After negotiating with Chef Derrick whether he can create a degustation style dessert platter for us or just choose a few of the popular ones that he recommends - we decided to go for the most sensible choice - ALL !!  All 7 full size dessert plate for 3 girls *happy grin*
There was a momentarily pause from the chef - then he proceed to make the No.1 of 7....
It was quite fun as we have no idea which dessert will come first, we left it to the chef's expertise to decide how the dessert feast should progress throughout the afternoon.

Liquid Nitrogen Action ; Yuzu Ice Berg

The smell of yuzu was wafting as the yuzu ice berg was being made then crushed in front of us.

Guava Cloud  SGD$15.00
elderflower, starfruit, sweet milk sauce

The guava cloud was made of pastel peach coloured guava meringue filled with guava ice. The yuzu ice was super refreshing and so was the sweet condensed milk snow. Served together with starfruit compote, a drizzle of elderflower syrup and scattering of edible flower petals. 

A light and refreshing dessert to have on a hot Singapore afternoon. 

Purple  SGD$14.00

No.2 was a dessert inspired by the purple abstract drawing in the bar - which was painted by none other than Janice Wong herself !
A smaller version of the drawing is encased in a perspex plate and becomes the "background" of Purple. 

Pretty Purple

The savoury purple potato puree was made to bring out the flavour of the berries. The delicate thin dark purple leather lacing the dessert was made of dehydrated berries which were rolled up and cut into the thin strips. 
The little domes of blackberry parfaits were very creamy, balanced out by the tart and refreshing fruits of the forrest sorbet. 
The lavender marshmallows were delicate in flavour so not to overpower the berry flavours that dominated the plate.  


Tools of The Trade

By the 2nd plate we were hyped up with sugar and we were perched on the bench - literally - just so we can look more closely on what is the next dessert he's plating for us.
I will probably freak out and lose concentration if I have 3 people staring at me whilst I'm doing work LOL (sorry chef...we were just super curious).

Popcorn  SGD$15.00
sweet and salty, yuzu

No.3 we were told is inspired by old time movies. 
Alternately adorning the sides of the long winding block of yuzu marshmallow were pudding like salted popcorn domes and dollops of salted caramel.
Then there were mounds of golden popcorn sand and what I think is very cute and pretty dill flower !!
And last but not least, a quenelle of tangy passionfruit sorbet.

We were instructed to eat the dill flower with the popcorn domes and it does add a little bit of twist on the flavour.
The dome itself tasted just like popcorn !! It had to be one of the best dessert I've ever had. 
Needless to say , this was the highlight of the dessert feast !!


"I think Janice is here" said Chef Derrick - he must have heard her walked in as we were still in popcorn dreamland. 
Not long after, Chef Janice came out and it was a moment of whoaaa...Janice herself is plating our dessert ! *whoaaa*

Basil White  SGD$16.00
sea grape, passionfruit puff, yuzu pastilles, coconut sorbet

I must confess....I forgot what form the basil infused white chocolate was presented as T___T
Didn't write it down on my note and my memory is very unreliable these days.

The basil infused white chocolate .... mousse (taking a big risk of getting it wrong here) was very nice (I remembered the taste, YAY!) and hidden under the translucent tissue thin passionfruit leather which is part of the three textures of passionfruit on the plate, the other 2 being passionfruit pate de fruit and passionfruit crisp. The trio really didn't dissapoint, the leather was packed with flavours and so was the pate de fruit, whilst the crisp just melts in your mouth. 

Sea Grapes


The coconut marshmallow sorbet had a very interesting texture, chewy like a marshmallow yet refreshing like a sorbet. I'm not a big fan of coconut flavoured sweets but I loved it ! 
Sea grapes may be an odd cast on the plate but its burst of salty sea water was a surprising but welcomed addition to the dominant tropical fruit flavours. 
That's not all the flavours in this No.4 dessert , there was finely cracked black pepper, a dusting of vanilla powder, chewy yuzu pastilles and coconut tapioca pearls.

Whilst preparing the next dessert, Chef Janice chatted with us and mentioned that she is launching her first ever book in London soon - well, that soon has passed and her book "PerfectionInImperfection" is now available to purchase online. 
The book took her 2 months to put together and comprises of 30 recipes, she shared with us that the book is a reflection what they have achieved in the past 3.5 years.

Ahh....the law of attraction....my aversion to goats cheese seems to now and again put me in a situation where I have no choice but to give it another go.
Fresh is No.5 and was a deconstructed goats cheese and camembert cheesecake. A scoop of the creamy cheese cake was served on a bed of cookie crumb and slices of sweet persimmon. 
Luv the beet and honey sorbet, so sweet and earthy in flavour and thankfully helped masked the strong goats cheese taste. The fluffy yoghurt snow was equally delicious and refreshing. 

Pistachio Black Sesame   SGD$14.00

I love the colour combination on the No.6, light and bright green pistachio sponge, charcoal black-black sesame soil and the golden brown caramel mousse.
Perhaps the flavours in the previous dessert was too strong, couldn't taste the pistachio in the fluffy sponge. The caramel mousse was slightly bitter, the ice cream was delicately flavoured with orange blossom and a drizzle of citrusy yuzu syrup helped to offset the heavy flavours.

Valrhona chocolate 72%, Evian, caramel mousse, praline, yuzu sorbet

The lucky No.7 - a very decadent creation to end the afternoon.
Semi-frozen rich and dark Valrhona 72% chocolate and caramel mousse that melts into nothingness in your mouth. A pool of kalamansi sauce and yuzu ice cream balanced out the richness of the mousse. 
A thin praline wafer, chocolate cookie crumb and salted caramel parfait also adorned the plate.
But the best part would have to be the thick and sticky salted caramel that oozes out when the mousse is cracked.

It was trully a wonderful sweet afternoon, I'm glad we came very early as there was no other guests present while we were there. 
Which gives us excellent opportunity to watch the very young and skillful Chef Janice and Chef Derrick worked their magic.
I love how there is a story behind each dessert, what inspires the creation, how the flavours put together, you can just see the passion and dedication they put into each and every single dishes that were put out.

It was a delightful dessert journey that left us full and can't eat dinner that night ! ^_^

Universal Restaurant, Darlinghurst


One of the perks (if you can call it that) of starting blogging is that you get to meet new people that shares the same interest (read : eating).
When Ms. Doctor (fluffy makan) wrote me an email asking whether I'd like to meet up with her for dinner, I must confess, I did hesitate for a while LOL
I've never met her before, so the thought of going out dinner that can last for hours is a bit daunting, what if we don't have anything to talk about ? (crickets chirping in the background *chirp, chirp*).
Turned out I have nothing to worry about, that girl can talk hahahahaha !

We got a bit lost getting to Universal as none of us have ever been there before. With just my Where Is map print out and her iPhone GPS, we finally got there...the long way.....
Turned out that it was right where I parked my car, but we went around the block LOL

Christine Mansfield's Universal Restaurant is located inside the Republic 2 courtyard, next to the ever so popular Vietnamese eatery, Phamish, which was already packed so early in the evening.

Please excuse the reddish tinge in all the photos, the lighting in the restaurant was pure red...dark red....the horror of editing the photos.......ARRGHHH !

Fuji Mama  $9.00
apple & honey puree, Peruvian spice syrup, apple juice

I picked one of the 2 choices available for the mocktails, or as they call it here, the Detox Virgins.
Drinking Fuji Mama was like drinking sparkling apple pie, sweet spiced concoction of apple with slivers of crunch fresh green apple.

Baguette & Extra Virgin Olive Oil 

Not long after the drinks arrived, a plate of baguette and olive oil for dipping was brought over.
The baguette was served cold, which was a bit of a let down.

The olive oil was served on a dish that reminded me of Optrex eye wash cap LOL
It was a bit off balance so we were warned to be careful when dipping our bread into it as it would easily topple over.

The menu layout in Universal is different to any other places, there are no entrees nor mains.
The items in the menu was laid out as progression from the lightly flavoured to the heavier flavoured dishes.
We decided to pick a few items from the menu to share, leaving rooms for their famed desserts.

Octopus Terrine  $27.00
watermelon, mint, green chilli and persian feta  

The octopus was incredibly melts in your mouth tender....it was amazing !
There was just right balance of saltiness from the fetta and olives, and the classic combination of watermelon and mint never fails.
This is a dish that packs a lot of punch although the flavours were light and refreshing.
Just couldn't get enough of the tender,creamy octopus though....

Sansho Beef Tataki  $27.00
miso pickled seaweed, taro wafer and shiso 

Next dish is still one of the lighter dishes, thick slices of wagyu tataki, with sweet and salty miso dressed wakame salad mixed with  baby shisho and scallions. Topped with thin crisp taro chips and avruga caviar.
The beef was not as tender as expected and overall the dish tasted too salty for me.
Miss Doctor who had a high level of salt tolerance didn't find it salty at all LOL

Sticky Rice & Salted Duck Egg Cakes  $26.00

We ordered this dish as we have read on reviews that this is a must order dish at Universal.
Chewy deep fried rice ball, drenched in sour Vietnamese style dressing, with a mixture of  mango, grapefruit and cashew nuts salad, resting on  betel leaf topped with fried shallots.
Couldn't taste the salted duck egg in the rice cakes though, probably masked by the strong dressing flavour.
Though it is a tasty and moorish dish, I still preferred the first dish of octopus terrine.

The next 2 dishes were from the heavier dishes list and we were hoping that the serving size would be more generous than the 3 we had, which was very small for the price.

Chilli Salt Soft Shell Mud Crab Tempura  $31.00

The look of whole crab on a plate looked very promising ! The soft shell crab was fried to crispy perfection...my only problem with it was that is was super salty >__<
Thankfully the green curry like sauce was sweet, which helps to offset the high level of salt.

Coorong Yellow Eye  $31.00

When the last dish arrived, I have to stifle a laugh.....This would have to be the most expensive fish dish I've ever ordered. I had to point out to Miss Doctor where the fish was - if you look very closely...it's the thin layer in between the foie gras and the potato galette - we had nothing else to say but to laugh LOL.
The fish was cooked well, and the foie gras was creamy and nicely caramelized and topped with sweet caramelized onions.
The spinach puree was again very salty...can't wait to get something sweet...

Gaytime Gone Nuts  $19.00

The dessert that made Miss Doctor goes Nuts !
We finally got to taste the famous Universal's Golden Gaytime inspiried dessert.
It was a delicious layer of honeycomb ice cream, salted hazelnut caramel, topped with crumbed cookies and caramel parfait, encased in a thin tuile. It was heaven.....so bad but oh so good...

white peach curd, peach and rosé jelly, peach macarons, fromage blanc sherbet, fairy floss

I chose something light from the dessert menu...okay...I chose it because the name sounded fancy...French fancy....like Marie Antoinette fancy....
And it didn't dissapoint, the pretty dessert arrived in a glass topped with fairy floss - pompadour like indeed :) Adorned with jewels like super cute mini macarons and frozen raspberries.
Love the dessert overall, the white peach curd, the jelly and fromage blanc serbet was a lovely combination.

Salted Butter Caramel
to accompany tea or coffee

We ordered tea to accompany our desserts, I got the Mariage Frères Thé des Mandarins ($10), a  rare Chinese white tea, silver needle buds scented with jasmine blossoms. Miss Doctor had the Casablanca ($6 ), blend of green tea and Moroccan mint with bergamot flavoured black tea.
Served alongside the pots of tea was the very yummy salted butter caramel - it was a perfect close to a meal.

There are hits and misses with the savoury dishes here, the flavours were off balanced at times and I must say, the prices are a bit steep for what we got.
The highlight of the night would be the desserts that were amazing ! Not to mention very reasonably priced compared the rest of the menu.

We will be back ...maybe just for desserts ^_*

Short Singapore Trip - Food Summary

Sorry for the lack of updates of late people , I'm still here...still blogging (struggling, but I shall persist !) :P
Had to go to Singapore during the last week of March for a 3 day training course, which of course I extended into a week long trip ^_^

It was a week long of foods, mostly consisting of junk foods and cakes gathered from places called the food halls in Singapore's malls.
That is what happens if you are one of those people that just can't dine alone in restaurant, so take away is the best options - not complaining because there are so many yummy foods for take away there !

Dinner @ Sarang

Went for dinner with my cousins on the night I arrived, since I was still dazed from the flight, left it to my cousin to choose a place.
Sarang is located on the 7th Floor of Orchard Central - the supposedly authentic Korean restaurant is unfortunately the worse I've ever had.
Seriously bad - the taste is far from authentic and not to mention very expensive, even compared to what we pay here in Sydney. The portions were small for the price charged as well - especially the pa jeon (pancakes) - used to seeing a frying pan sized pa jeon here, was quite shocked to see just 2 thin pa jeon the size of coaster on the plate. 
Needless to say we left disappointed and still hungry.

Bread Society

Drool worthy display of goodies

Bread Society is a chain of bakery by the same people who brought you Bread Talk chains of bakery.
The selections here is more of traditional French style bakery with a twist - a good mix of classic flavours and local flavours. Their consultant and head chef are Japanese, which would explain the cutesy presentation and packaging of their goodies.
Since I'm such a sucker for cute Japanese stuffs, I had Bread Society for breakfast on most days and sometimes desserts too :P
They also have freshly squeezed juices ready to go and the super addictive freshly blended strawberry milk - with real strawberries !

It has been a long time since I had so much carb intake in a span of few days LOL
I was scared for while...a very short while...then the carb onslaught continues for a few more days....

These bite size doughnuts were so dangerous, because they are baked, it's so easy to pop one after the other. So much for my plan for eating just 5 and kept the rest for a bit later - pfftt.....
The sakura filling is a seasonal flavour with a special Merlion shaped doughnut, it was a bean paste filling flavoured with sakura flowers, not too bad. 
My favourite would have to be the creamy strawberry milk and the sweet potato filled ones. The caramel filling was a bit of a let down as the caramel was burnt, dry and sandy :(

Before you start thinking "OMG, she's such a pig, all those in one meal ??", one thing to note if you haven't had MOS burger before is that they are small burgers (at least I think they are tiny LOL).
Probably as big as McDonald's cheeseburger ? Hence it is justifiable that I have 2 burgers, a side of croquette and 3 pieces of cream filled frozen strawberries because Singapore is stinking hot.
Somehow they don't taste as good as I remembered them, or maybe the last one I had was the real stuff in Japan :P

Tori-Q Bento $5.80 (4 pieces of mixed yakitori, rice and pickles)
Ginza Bairin Katsu-sando $8.90

Tori-Q is a chain of fast yakitori store, usually located in most food halls in the malls. The bento are especially of good value - a generous portion of steamed rice, topped with 4 sticks of yakitori. 
I always add few extra sticks of.....crispy chicken skin yakitori !! They are oh so bad but oh so delicious and crispy and oily...chicken skin...mmmmm.....

Ginza Bairin is a branch of Tokyo Ginza's Tonkatsu Ginza Bairin - as the name suggest, they specialize in breaded pork cutlets a.k.a. tonkatsu.
Their restaurant in ION Orchard has a seat in area and also a quick takeaway area - grabbed a box of freshly prepared katsu-sando to go.
The tonkatsu was juicy with crispy crumb, wished they put some cabbage with it though, tonkatsu without cabbage is just incomplete.

After a few nights staying at the hotel for the work part of the trip, I moved to my cousin's house for the remainder of the stay. Miss i.eat.sweet took time out from her holiday in Jakarta to meet up with me in Singapore for a few days of eating spree hohohohohoho ^o^

Sent her off to grab some coffee from the hawker centre across the road since I'm too lazy to walk in the heat (I'm such a good cousin...LOL).
Where else but here that coffee comes in plastic bag tied with a plastic string - comes with plastic straw too...hahahahahaha !
I wonder if they know that plastic + heat = melted plastic = not particularly very safe ?
We quickly pour it into mugs after taking photos , laughing our heads off and spilling them all over the sink.

Sergeant Hainanese Chicken SGD $8.00

From ION Orchard food hall - had them twice during the trip. You get to choose between boiled of roasted chicken, thigh or breast, the meat was juicy and very tender. 

Yonehachi 

Another food chain from Tokyo that has found its way to Singapore food scene.
Yonehachi offers a variety of okowa - sticky or glutinous riced mixed with a variety of vegetables or meat. Here they offer them as set meals that comes with side dishes to make up a healthy complete meal or you can just buy the okowa on their own. 

Chicken Teriyaki Shokado Set Meal SGD$14.80

With the set meals, you get to choose the okowa, the variety on offer were azuki (red bean), chestnut, sansai (vegetables), hijiki (seaweed) or salmon. 
The side dishes we had were simmered vegetables, teriyaki chicken, hijiki salad, beans with sesame dressing, pickles and miso soup - I feel healthy already LOL

The glistening rice arrived piping hot from the steamer, served in the wooden box it was steamed in. 
Love the chewy rice and the vegetable and gingko nuts mixed in it - someone should bring them into Sydney !!

Suckling Pig Crepe @ ION Orchard Food Hall
SGD $6.00 for 5 pieces

Miss i.eat.sweet said she was full but that didn't stop her buying a box of the suckling pig crepe LOL
I must admit that they looked so damn good and hard to resist. The taste ? It's okay lah....
Not too flash, the suckling pig was a tad chewy and the crepe was dry :P

Mushiya Steamers @ ION Orchard
SGD $2.00 each

We are still in the ION Orchard Food Hall - I think I can survive for one whole week just eating from this food hall ahahhahahaha....There are so many things to try here....
Mushiya steamers is obviously from Japan and they sell steamed cupcakes - the moist dense type or the light and fluffy fuwa-fuwa style. 
The flavour combinations are interesting, from the Japanese flavoured matcha kintoki, kurogoma mochi kintoki, or the more classic combo of chocolate, caramel, strawberry and cream cheese.
Some of the flavours are a bit extreme though....curry steamed cupcakes or potato and corn cupcakes anyone ?

Taste wise they are a bit chewy and dry, the flavours were not that distinct either. 
At least they are pretty and cute to look at....

Wang's Cafe @ T3 Departure Hall
SGD $3.40 for a set of 2 toast + coffee

A trip to Singapore is not complete without having kaya toast !! We managed to squeeze a breakfast of kaya toast before we fly out :)
Kaya is a spread made with egg yolk, coconut milk and scented with pandan leaves, it's more like a soft custard than a fruit spread. 
Sandwiched between thin crisp toast slices were the kaya and thin slabs of cold butter....slab of cold butter....so healthy....ahhahahahaha....
Miss i.eat.sweet had Kopi-O (black coffee) to go with her toasts and I had the yin yeung, a mix of coffee, tea and evaporated milk.

That's a quick summary on what I've had during the 9 days trip - of course there are meals at work that I didn't take photos of, but fret not , they are also carb loaded meals -___-;
I was craving greens towards the end of the trip...no kidding.....

Of course that's not all I had while I was in Singapore, but these 4 places we dined at deserves a special individual posts :)
