JAAN, Singapore

Happy 2012 Everyone (who still reads my neglected blog) !!

Let's start the first post of 2012 with one from back in March 2011 - shocking I know, this post has been in draft for almost a year *shame shame shame*.

When I made the reservation (via email) to JAAN, it was a surprised when the reply I got was that Chef André Chiang had moved on from the restaurant and opened up his own place.
Hence the restaurant formerly known as JAAN par André is now simply just called, JAAN.

Then it came to dilemma.....should I try booking at his new restaurant or just give JAAN with its new chef a go....
Three courses over lunch for just SGD$52 58 was just too good to pass - decision made !

Clean and Sleek

We took the long ride up to the 70th floor of the Equinox complex to get to the restaurant - okay i lied, the ride was far from being long, it was so quick that my ears popped >_<

The entrance to the restaurant itself was a long dark hallway and at the end you see bright light and the view in that greeted us was just simply breathtaking.
The view from 70 floor above ground was just amazing - I'd imagine it would even be more beautiful comes night time when the city skyline lights up.

Murano Crystal & Silver Free-Form Chandelier

There were 3 of us that day and it was a little bit awkward when each of us had a waiter each to pull out our chair. Too much attention to what we are used to here in Australia, even in a fine dining restaurant ^_^
The maître d' then asked what made us travel all the way from Sydney to dine there...there was moment of silence when my brain slowly thinking...how did he know ?
Obviously I have given him my Aussie number when I made the reservation *doh*
I wonder if that is why we got the prime sitting location ? Smack bang in the centre by the window with the best view in the house ? I'd like to think so LOL

The "Snacks"  Trio

These 3 little things of goodies were brought to our table whilst we peruse the menu - first we thought "oh, these must be the amouse bouche", then there is another "amouse bouche" that follows, so I'm gonna call them "snacks".

I must say, this is the first time that we got so many different type of "snacks". Usually here we would get a bowl of bread crisps or something simple like that. Not THESE !!

Trio of Crips
parsley, barley and lamb bacon

Three paper thin crisps - a parsley crisp, barley and lamb bacon crisp.
They may be paper thin but packed full with its individual flavour - the lamb bacon one in particular had a strong flavour - lamb flavour of course which I couldn't stand - so left it to the other 2 cousins to demolish it.

Crisp Salmon Skin
salmon roe, lemon snow and dill

Salmon skin has never looked so appealing - crisp salmon skin, topped with bursting salmon caviar, sprigs of dill and the deliciously delicate lemon snow.

Potato Crips and Anchovies
crème fraiche, chives

Gimmick Factor - 10/10.
The presentation in a recycled anchovy tin is just too cute - thin potato crisp topped with anchovy, creme fraiche, chives.

And then...the REAL amouse bouche made an appearance :

Smoked Eel Royale

A petit cube of smoked eel royale presented on a slab of black stone, covered with fine crumb of rye bread , topped with micro herb and salmon roe.

Did it tantalise the taste buds ? It definitely did the job, the pudding like royale was silky, smooth and just melts in your mouth. The smoked eel flavour was distinct but not too overpowering, just right. The crunchiness of the rye bread crumb added a lovely contrast to the royale.

The View from our table

Sourdough & Black Olives Roll ; 2 Type of Butter
Jaan bag holder ; Black Truffle Brioche & French Baguette

The service at JAAN was definitely attentive, 2 of us had a bigger handbag so a basket was propped next to us to put our bags in, whilst my other cousin who carried a smaller bag were given a bag holder to hang her bag.
It is always tough when you are presented with a variety of bread rolls - you want to try them all but know that in doing so you are filling the stomach with unnecessary carbs.
Luckily, we got to taste all the offerings between the 3 of us ^_^

Of course we have to have butter to accompany the bread - salted butter and the always delicious nutty beurre noisette.
My favourite out of the 4 rolls would have to be the black truffle brioche, not only for the obvious presence of truffle but also it was more of a flaky pastry than bread. Light and crunchy with delicate aroma of truffle.

There are 3 options to choose from for each course , which was perfect for us :)
Let's start with the Starters....

Velouté of White Beans
confit oxtails and mushrooms

Okay, it didn't arrive at the table as a pond of white soup.
It was very pretty and colourful, but alas, the waiter was much quicker than I was with the shutter T___T
Underneath the velouté of white beans were apricot and a variety of mushrooms.
It was hearty, creamy, velvety, the flavour of the velouté was quite light that the more delicate flavour of apricot and mushroom still comes through.
There wasn't much of the oxtail but when you get a bite of it, it was tender and the meat just falls apart.

See..I'm not lying ! There were apricot and mushroom !

Seared Foie Gras
beetroot and cherry composition
(supplement $10.00)

My choice of starter, a more than generous portion of seared foie gras - it was thick and huge !
The plain brown toned foie gras was contrasted by the rich red of beet meringue, beetroot daikon, cherry jam.

Thick !!

At times I found foie gras can have quite strong iron flavour, but this time it was surprisingly quite delicate, rich of course, but not too heavy on the flavour.
It simply melts in the mouth and the earthy beetroot flavoured accompaniments complimented the flavour.

Hay - Baked Norwegian Salmon
cauliflower and lemon farm cream

At the time of our visit, the kitchen was headed by Swedish born Ebbe Vollmer ( I believe the restaurant  has a new French chef now).
We would expect something in the menu that would be Scandinavian in flavour, so the hay-baked Norwegian salmon would fit the bill perfectly.
The cylinder of melt in your mouth smoked salmon was teamed with smooth cauliflower puree, crispy fried cauliflower florets and paper thin rye bread crisp.

Now onto the Mains...

Braised Brisket of Veal
spring vegetables

The braised veal brisket was not as tender as I'd expected, it was quite dry and tough.
Served with horseradish potato puree, spring vegetables and tarragon infused jus.

Roasted Ballotine of Sakura Chicken
trompettes 1-2-3, roasted salsify

The roasted ballotine of chicken was done very well, the meat was tender and juicy with really crisp skin.
Served with trompette mushrooms, roasted hazelnut and roasted salsify. The flavours were rich and earthy, delicious :)

Pan Roasted Crispy Seabass
orange salad and pumpkin purée

By pure coincidence, my choice of main was plated the same way as the entree LOL
Just swop the pink strip with a yellow strip ;)

The fish was also cooked to perfection, the skin was crisp and the meat was very soft and moist.
The addition of yuzu foam added that citrusy notes, love the crunchy bee pollen, the creamy pumpkin puree and the fresh orange salad.
A light yet satisfying main dish.

Marina Bay Sands

Vanilla Buttermilk Pannacotta
lingonberry jelly, bay leaf foam

A pre-dessert is in order to cleanse the palate - vanilla buttermilk  pannacotta, lingonberry jelly (another Scandinavian classic) topped with bay leaf foam.
The pannacotta was creamy and the lingonberry jelly added slight tartness, the only problem was the bay leaf foam that tasted a little bit like mint toothpaste.....
Cleanse the palate I suppose....

The sweetest part of the meal....da Desserts....

Raspberries and Vanilla
candied lemon zest

Underneath the thin sheath of white chocolate was vanilla cream scented with lemon topped with crushed frozen raspberry and raspberry sorbet.
The creaminess and the sweetness of the cream was balanced out by the tangy and refreshing raspberry, a very decadent dessert.

Marquis of Chocolate
malt, grains and hops

Lovely dark chocolate mousse disc rolled within malt jelly, accompanied with spicy caraway ice cream. The dots of honey and puffed rice somehow reminds me of eating a bowl of breakfast cereal, the grains, honey and milk :)

Box of Truffle Jewels

"Would you ladies like a cigar ?"
The cheeky waiter asked us.....
Another great presentation at Jaan !
The chocolate truffles petit fours were presented in an antique wooden cigar box - the wow factor was definitely there as the lid was slowly opened up *ahhhh*....

Hazelnut White Chocolate & Coffee Coconut

Of course we must have one of each - hazelnut praline with wafer and coffee coconut truffle - a perfect end to a wonderful meal.

Tea & Coffee

It was a fantastic dining experience at JAAN, the waiters were very attentive and though very formal but not uptight.
The food were beautifully presented and the each components in the dishes has been well thought off so that there was just the right balance of each flavours.

The view was a bonus of course and the price, unbeatable ! 3 amazing courses with little bits of extras here and there for less than $60 is just great.

Will definitely pop in again if I am in Singapore next ^_^

2am:dessertbar, Singapore

2am:dessertbar

Ever since I missed out on Janice Wong at Sepia event during the 2010 SIFF, I have made a promise to myself, no matter what, rain, hail or shine (or something like that), I HAVE to visit her dessert bar when I'm in Singapore next !

Due to my super lack of blogging, this trip was back in March this year - since they do change their menu quite frequently, some of the desserts in this post might not be on it anymore.

The bar was open at 4.00pm back then, now they open from 6pm - we (read : I ) booked a table for 3 of us at that time - just so I can get decent natural light for the photos ho....ho...ho...ho...

The location is not exactly the easiest place to find for us non local people, our taxi dropped us off near the main road and it was up to us to find where it is.
The entrance is on the side of the building then you have to walk up the stairs, honestly, I though we were walking up the wrong place as it was as if the place is not open - but it was ! *phew*

As we found out later, usually people turn up when it's dark, not in broad daylight and in the time slot of neither afternoon tea nor early dinner. Then I had to explain about the blog, the photo and all was good and we escaped the possibility of being classified as weirdos.

Seatings

As there was practically no one else beside us 3, we were told to sit anywhere we like by Derrick, who prepared the desserts for us.
While the white leather lie back lounge looks so comfortable, it was unanimous that we should perched ourselves on the tall (we shorties had to climb up) white leather bar tools by the open kitchen so we can see all the sweet actions !

Hot or Cold Water ; Da Gadgets

At 2am:dessertbar you have the options of pairing your desserts with wine/cocktails - this place is a bar after all ^_^
After negotiating with Chef Derrick whether he can create a degustation style dessert platter for us or just choose a few of the popular ones that he recommends - we decided to go for the most sensible choice - ALL !!  All 7 full size dessert plate for 3 girls *happy grin*
There was a momentarily pause from the chef - then he proceed to make the No.1 of 7....
It was quite fun as we have no idea which dessert will come first, we left it to the chef's expertise to decide how the dessert feast should progress throughout the afternoon.

Liquid Nitrogen Action ; Yuzu Ice Berg

The smell of yuzu was wafting as the yuzu ice berg was being made then crushed in front of us.

Guava Cloud  SGD$15.00
elderflower, starfruit, sweet milk sauce

The guava cloud was made of pastel peach coloured guava meringue filled with guava ice. The yuzu ice was super refreshing and so was the sweet condensed milk snow. Served together with starfruit compote, a drizzle of elderflower syrup and scattering of edible flower petals.

A light and refreshing dessert to have on a hot Singapore afternoon.

Purple  SGD$14.00
purple potato puree, blackberry parfait, leather, lavender marshmallows, fruits of the forrest sorbet

No.2 was a dessert inspired by the purple abstract drawing in the bar - which was painted by none other than Janice Wong herself !
A smaller version of the drawing is encased in a perspex plate and becomes the "background" of Purple.

Pretty Purple

The savoury purple potato puree was made to bring out the flavour of the berries. The delicate thin dark purple leather lacing the dessert was made of dehydrated berries which were rolled up and cut into the thin strips.
The little domes of blackberry parfaits were very creamy, balanced out by the tart and refreshing fruits of the forrest sorbet.
The lavender marshmallows were delicate in flavour so not to overpower the berry flavours that dominated the plate.

Tools of The Trade

By the 2nd plate we were hyped up with sugar and we were perched on the bench - literally - just so we can look more closely on what is the next dessert he's plating for us.
I will probably freak out and lose concentration if I have 3 people staring at me whilst I'm doing work LOL (sorry chef...we were just super curious).

Popcorn  SGD$15.00
sweet and salty, yuzu

No.3 we were told is inspired by old time movies.
Alternately adorning the sides of the long winding block of yuzu marshmallow were pudding like salted popcorn domes and dollops of salted caramel.
Then there were mounds of golden popcorn sand and what I think is very cute and pretty dill flower !!
And last but not least, a quenelle of tangy passionfruit sorbet.

Pretty Lil' Dill Flower

We were instructed to eat the dill flower with the popcorn domes and it does add a little bit of twist on the flavour.
The dome itself tasted just like popcorn !! It had to be one of the best dessert I've ever had.
Needless to say , this was the highlight of the dessert feast !!

"I think Janice is here" said Chef Derrick - he must have heard her walked in as we were still in popcorn dreamland.
Not long after, Chef Janice came out and it was a moment of whoaaa...Janice herself is plating our dessert ! *whoaaa*

Chef Janice in action

Basil White  SGD$16.00
sea grape, passionfruit puff, yuzu pastilles, coconut sorbet

I must confess....I forgot what form the basil infused white chocolate was presented as T___T
Didn't write it down on my note and my memory is very unreliable these days.

The basil infused white chocolate .... mousse (taking a big risk of getting it wrong here) was very nice (I remembered the taste, YAY!) and hidden under the translucent tissue thin passionfruit leather which is part of the three textures of passionfruit on the plate, the other 2 being passionfruit pate de fruit and passionfruit crisp. The trio really didn't dissapoint, the leather was packed with flavours and so was the pate de fruit, whilst the crisp just melts in your mouth.

Sea Grapes

The coconut marshmallow sorbet had a very interesting texture, chewy like a marshmallow yet refreshing like a sorbet. I'm not a big fan of coconut flavoured sweets but I loved it !
Sea grapes may be an odd cast on the plate but its burst of salty sea water was a surprising but welcomed addition to the dominant tropical fruit flavours.
That's not all the flavours in this No.4 dessert , there was finely cracked black pepper, a dusting of vanilla powder, chewy yuzu pastilles and coconut tapioca pearls.

A medley of sweet of savoury that worked in harmony :)

Whilst preparing the next dessert, Chef Janice chatted with us and mentioned that she is launching her first ever book in London soon - well, that soon has passed and her book "PerfectionInImperfection" is now available to purchase online.
The book took her 2 months to put together and comprises of 30 recipes, she shared with us that the book is a reflection what they have achieved in the past 3.5 years.

Fresh  SGD$16.00
chevre cheesecake, beet honey, yoghurt

Ahh....the law of attraction....my aversion to goats cheese seems to now and again put me in a situation where I have no choice but to give it another go.
Fresh is No.5 and was a deconstructed goats cheese and camembert cheesecake. A scoop of the creamy cheese cake was served on a bed of cookie crumb and slices of sweet persimmon.
Luv the beet and honey sorbet, so sweet and earthy in flavour and thankfully helped masked the strong goats cheese taste. The fluffy yoghurt snow was equally delicious and refreshing.

Pistachio Black Sesame   SGD$14.00
orange blossom ice cream

I love the colour combination on the No.6, light and bright green pistachio sponge, charcoal black-black sesame soil and the golden brown caramel mousse.
Perhaps the flavours in the previous dessert was too strong, couldn't taste the pistachio in the fluffy sponge. The caramel mousse was slightly bitter, the ice cream was delicately flavoured with orange blossom and a drizzle of citrusy yuzu syrup helped to offset the heavy flavours.

Araguani h2O  SGD$15.00
Valrhona chocolate 72%, Evian, caramel mousse, praline, yuzu sorbet

The lucky No.7 - a very decadent creation to end the afternoon.
Semi-frozen rich and dark Valrhona 72% chocolate and caramel mousse that melts into nothingness in your mouth. A pool of kalamansi sauce and yuzu ice cream balanced out the richness of the mousse.
A thin praline wafer, chocolate cookie crumb and salted caramel parfait also adorned the plate.
But the best part would have to be the thick and sticky salted caramel that oozes out when the mousse is cracked.

Gooey Salted Caramel Innard....

A very rich and decadent dessert indeed....

It was trully a wonderful sweet afternoon, I'm glad we came very early as there was no other guests present while we were there.
Which gives us excellent opportunity to watch the very young and skillful Chef Janice and Chef Derrick worked their magic.
I love how there is a story behind each dessert, what inspires the creation, how the flavours put together, you can just see the passion and dedication they put into each and every single dishes that were put out.

It was a delightful dessert journey that left us full and can't eat dinner that night ! ^_^

Fifty Three, Singapore

As soon as I found out that I will be going to Singapore for some training, the first thing to do was to confirm with i.eat.sweet that she can join me there. Once it's confirmed, the next thing to do was do some research on places to go to on our weekend eating spree in Singapore...hohohohoho....^o^

Like in Sydney, some of the restaurants there do special lunch menu, and at Fifty Three you get 3 course for SGD$53.00 (incl. tea & coffee).
It is quite expensive when compared to standard cost for a meal there that is around SGD$3.00 :P

Natural & simplistic dining room

Finding the place was not as easy as I thought, their website said that they are located near the Peranakan Museum on Armenian Street, so that's what I told the taxi driver.
Got off the car and we were so lost LOL. Ended up going into the museum's gift shop and ask for direction (turns out its only a few doors down :P).

A lady in black suit with a headset was outside the door (like Man In Black style - minus the RayBan)....at this point I was thinking...yikes !! I didn't expect this place to be that formal !!
Her task was to greet the customer and guide us up the stairs into the dining room which is located on the first floor.

Orchid Pot ; Voss Sparkling Water

The dining room was warmly lit by the natural lighting and it just felt so....natural ? Scandinavian like decor, lightly coloured wooden furniture, white windows, and sandstone walls - simple and calming (at least I felt that way lol).

Tapioca Crisps with Shirasu
walnut emulsion dip

As we peruse the lunch menu, the waiter brought over the amuse bouche - thin tapioca crisp with shirasu , they are this tiny fishes, 1-2 months old baby sardines to be exact :P If you look closely at the crisps, the are the darker coloured vein like strands - they are that tiny.
The walnut emulsion to dip the crisps in were delicious, very creamy with nutty flavours with slight zing from the shaved parmesan.

Charcoal and Potato & Yoghurt
Danish butter, toasted wheat

The cutest bread basket ever !! The smell of freshly baked bread wafting from the pot was simply intoxicating.
The black charcoal bread would have to my favourite, not only it looked so pretty but also tasted good. It's hard to describe what charcoal bread tasted like, so if you are curious, go to an Asian bakery (like Bread Top here in Australia) and get one.
The yoghurt and potato bread was also good with a slight tang from the yoghurt.
The Danish butter itself was sooo good......the addition of toasted wheat ears (at least I think they are wheat ears) made it special - crunchy toasty bits that tasted like pop corn...mmmmm....

Tarragon scented wet napkins

See...more charcoals :) To clean our hands after nibbling on the crisps and slathering delicious butter on the bread, we were give some tarragon scented wet napkins. They are those ones that comes compressed and you pour hot water over it to hydrate.
As the hot water was poured over, the aroma of tarragon was released and linger on for a long while.
My cousin found it too strong to her liking so I shifted the plate to my side - I love the anise smell of it :)

Mud Crab & Kohlrabi
apple and chickweed
(supplement of SGD $10.00)

I chose the mud crab and kohlrabi entree, the crab was creamy and sweet. The kohlrabi was served as a puree underneath the pile of silky crab meat, the addition of green apple crisps and cripy charcoal breadcrumb gives the dish another dimension in texture.
The flavour was clean, simple and balanced, loved it :)

Scallop and Passionfruit
tea and herbs

A pretty plate of sweet and tender Hokkaido scallop, complemented by lavender and earl grey granita, passionfruit puree, watermelon and for texture the tapioca shirasu crisps and crunchy white radish.
The dish was a sweet and refreshing one, I especially loved the granita.

White Jasmine Sparkling Tea  SGD$12.00 / glass

While we waited for our main, our waitress came over and inquired whether we'd like to try their new house made white jasmine sparkling tea.
It has a slightly alcoholic taste despite being alcohol free, it was sweet and had delicate flavours.
I think it can pass as a non-alcoholic champagne ;)

Red Gunard and Hazelnut
Beluga lentils

i.eat.sweet's chose the fish option for her main, served on a bed of beluga lentils and hazelnut praline.
The red gunard was cooked perfectly and it has a creamy buttery texture, I'm usually not a fan of lentils but these were actually quite nice. Its name probably comes from its close resemblance to Beluga caviars :)

Base plate for my main dish

Wagyu Cheek and Alliums
Asian pear and wood sorrel
(supplement of SGD $10.00)

My main dish of wagyu cheek was full of edible flowers that were new to me , the wood sorrel and alliums - I don't recall them having any particular flavour nor taste though...doesn't matter, at least they made the dish prettier.
The cheek was very tender and gelatinous, the crunchy nashi pear spheres added some fruity sweetness and the onion broth had a very lovely caramelized onion flavour.

"Waiter...there's a clover in my food"

Pineapple with Chinese Five Spice
coconut and brie
(supplement of SGD $5.00)

This dessert was served on a metal disc platter, quite a striking presentation.
The pineapple was nicely charred and caramelized with just a slight hint of the Chinese five spice. Served on a bed of olive crumbs, topped with coconut shavings and coriander, and also a brie ice cream that was too strong to my liking.
It was a strange mix of sweet and savoury, asian and western flavours that actually works !

Amedei Chuao
meringue, cassis leather
(supplement of SGD $10.00)

The hardest dessert plate to take photo of...tried so many different (awkward) angles and not one seems to be right.
So just had to break it down into different shots then :P

Zig-zag of Amedei Chuao chocolate, cassis leather and meringue

The Amaedei Chuao is a extremely rich and strong dark chocolate, served as a creamy chocolate paste here. Adorning the sides of the paste were fresh berries, mini cassis meringue that was perfectly chewy and also scrolls of sour cassis leather.

I couldn't figure out what the log of wood look-alike thing was, then upon inquiring with the waitress, we found out that it was actually grated water chestnut that has been compressed into a log ! No wonder it tasted so familiar....

Corn Ice Cream ;  Compressed Grated Water Chestnut

The corn ice cream was delicious, it has a lovely roasted sweet corn flavour that was just amazing.
Topped with crunchy roasted corn that was slightly salty....deh-li-cious !!

Tea & Coffee

Apple Jellies

A rock that had oogling apple jelly eyes - LOL !
We were instructed to peel the jelly off the rock (literally peeling it off...it stuck to the rock), put it on your tongue and let it melt slowly. As it melts, the flavour will intensify, if however you found the flavour is too strong, just chew on it and it will cut off the flavour - how cool is that ?!?!

It was a fun sensation, there was a slight tingling on your tongue and the apple flavour was really slowly being released as it melts - it was cool !!!
The nerd in me came out as I was eating it...trying to figure out what could they have made it from LOL
It doesn't melt like gelatine, that leaves alginate or xanthan gum gels as possibility....hmmmmmmm.....
(might do some unauthorized investigative work in the lab .....)

The lunch at Fifty Three turned out to be the most memorable dining experience we had during this short trip.
The food truly exceed our expectations and the service was faultless, everything was perfect.
Would be interesting to see what the dinner tasting menu would be like, more interesting dishes I'm sure !
The service does not end at paying the bill, the lady in suit who greeted us as we walked in actually walked us out as well, how's that for service from beginning to the end ^_^

Sure, we ended up paying more than the SGD$53.00 as some of the dishes we picked comes with a supplement charge, but truly, the foods were well worth it :)
