SIFF 2010 - Dan Hong's Degustation Lunch - Lotus, Potts Point

Finally, the most anticipated Sydney International Food Festival 2010 has arrived ! This is the time of the year where there are food festivals everywhere in town and many restaurants are having special dining events, be it dessert nights, brunches, high tea, lunches or dinners.

When I read in the Merivale newsletter that Chef Dan Hong of Lotus Bar & Bistro in Potts Point is doing a special degustation lunches again for the SIFF 2010, I knew I just have to book myself in.
There wasn't much information given on this special lunch, except that it will be a suprise and the only hint we got is this from the chef ( from the Merivale Food Festival webpage ) :
"The magic won't just be on the plate" and "Creatures of The Deep"
With just that as a hint, I had no doubt that I will not be dissapointed as I had an impressive degustation lunch here during the Merivale's Feast for The Senses back in July.

The Power of Magic @ Lotus

We arrived way to early for our booking and we saw Chef Dan Hong himself writing today's lunch  theme on the blackboard when we got there
We were so early that the restaurant is not ready to open yet, LOL ! So we were asked to wait a few minutes outside while the staff are doing the final touches to the table settings.

First question that popped into my mind when I read the board, who is Liam Power ? Is it going to be a collaboration lunch today ? Then the second question is how is the magic part of the theme is going to be incorporated into the lunch ?

I found it really fun and exciting when you just don't know what to expect :)
At the least we now know what we are having for lunch, as promised, the menu revolved around creatures of the deep - seafoods that are currently in season.

Sparkling water gone couture ; Warm sourdough

Wow...even water companies has gone into collaboration with couture designers ! Missoni in this case has made special edition bottles with San Pellegrino. Pretty bottles :)
While we wait for the first course, we were served a freshly baked warm sourdough bread, fluffy centre and crispy crust.

Ceviche of Sea Scallops with Vietnamese Flavours

The first dish of 5 course degustation lunch was a very nicely plated ceviche of sea scallops with a spicy and refreshing consomme. The consomme itself has a very distinct taste and aroma of fish sauce, which is of course the must have condiments of Vietnamese cuisine.
The sea scallops were so fresh, sweet, tender yet still firm. There was a pretty scattering of salted dried konbu strips, fried diced garlic, slices of jalapeno, micro herbs : shisho and coriander.
To our delight the serving size was quite generous as we just couldn't get enough of it.
This is definitely a great start to our lunch.

Say Hi ! to Liam Power

The mystery is solved !! The magic part of today's lunch comes in form of magic tricks by Liam Power, magician extraordinaire !!
So he is not a chef as I speculated earlier , but I'm not 100% incorrect as he had trained as a chef before he decided to that magic is what he really wanted to do ( info gathered from his webpage of course :P).

Liam performed his magic at every table, which was so much fun ! Even after asking him to repeat a few tricks several times, we were still amazed and gobsmacked each time. The waiter who was standing behind him kept grinning at us, our faces must have looked so ridiculous hahahahahahahaha !!
Thank you for entertaining us while we wait for the next course Liam !

Kimchi Consomme with Octopus, Black Mussels & Silken Tofu

The consomme was poured out of a jug onto the plate on the table, but I was distracted by the magic that by the time I turn around it has been poured onto our plates :(
Isn't this such a pretty dish ? The brightly coloured flowers and the seafood is just stunning.
The kimchi consomme was another refreshing and tangy broth, which was thankfully not as spicy as the first dish. The flavour was quite subtle as not to overpower the more delicate flavours of the seafood.
The octopus was very tender and the black mussels were fresh and sweet.
There was also silken tofu studded with edible flowers and a piece of ito konnyaku ( thread konjac).

Spring is definitely on the plate, can't say the same on the weather outside though, it was raining and way too gloomy for a Spring day !

Steamed Snapper with Spanner Crab, White Fungi, Shiitake & Thickened Ginger Broth

The fish arrived with a glistening film over it, which was the thickened ginger broth that tasted so good. It has a slippery texture which gives a perception of richness and creaminess without the fat. The very fresh piece of steamed snapper was resting on a bed of silky spanner crab meat. It's Chinese home style steamed fish with ginger and shiitake gone high class :)
The fish was cooked perfectly, the meat was flaky, soft and sweet.

Passionfruit Custard, Chocolate Meringue, Yoghurt Sorbet

Next came the first of two dessert courses, a passionfruit custard on the bottom, a layer of crumbed biscuits, a layer of broken pieces of chocolate meringue and topped with a cooling yoghurt sorbet.
We waited for about 20minutes for the dessert to come out, but it was worth all the waiting !
It was amazing !!  The waitress instructed that the best way to eat it is by getting a bit of everything.
To summarize : smooth tart passionfruit custard + sweet buttery sand of biscuits + very chocolatey chocolate meringue + refreshing yoghurt sorbet = one damn good dessert in a glass.
As proof, here is Oni from i.eat.sweet showing her almost spotless glass and wanting some more.

"Sir Chef, can I have some more please?"

Although I know what to expect, it was still quite funny when we were given a small dish with 3 Miracle Frooties tables 5 minutes before the next course of desssert was being served. So there we were, sitting silently trying to suck on the tablet while ensuring "an even coating of the mouth" as the waitress instructed as quickly as possible. They are definitely not one that is quick to dissolve, arrgh !
We were still sucking when the plate of fruit arrived , so we just stared at the plate for a few minutes while swirling the tablet around in the mouth LOL.

Miracle Fruit Plate

You would have know about the Miracle Frooties if you have been following the food blogs that had reviewed them sometime last year. These tablets, once it has disintegrate and coated your mouth, will make everything sour tasted sweet, cool huh ?
So of course, the fruit platter consist of all the sour fruits that is currently in season - we got lime, lemon, strawberries, raspberries, very unripe pineapple, orange, passionfruit and a cherry tomato.
We gingerly took a bite of either lime or lemon first....*drumroll*......It is very SWEET !!! The pills worked !! YAY !!
Our conclusion is that the most sour fruit will taste the sweetest, but the effect didn't last as long as we thought it would.
Smart me leave the lime last and when I bite into it the effect has worn off...it tasted as lime should , very sour >_<
Tips for you , do not leave the most sour fruit last.

Last performance by Liam Power ; *wave* to Chef Dan Hong in the background :)

As we finished the last piece of sour fruits platter, suddenly all of the diners sitting outside were ushered inside. Rain ? Then the music was turned off and we have one last performance by the magician of the day. The chef took a short break and enjoyed the magic show for a while with the diners :)
All of us had fun with the performance and the lunch ended with a couple of big rounds of applause for the magician.
Kudos to Chef Dan Hong for another great dining experience and a well thought and executed 5 course degustation menu :)

This special degustation lunch @ Lotus only runs for 2 Saturdays in October - 2nd and 9th.
$70 for 5 Courses + $40 for optional wine matching.

Creatures of The Deep Lunch @ Lotus Bistro & Bar , Potts Point

As part of this year's Merivale Feast for The Senses festival, Lotus Bistro & Bar is open lunch on that day only for a special 5 course degustation lunch.
Chef Dan Hong especially created this degustation with his creativity and using what the sea has to offer.
I was so looking forward to this that I booked it as soon as it was advertised :P
Almost have to cancel on it as my original dining companions had to cancel out , but thankfully I found a friend to drag along *pheww*

Special lunch degustation crowds ; Lotus Bistro & Bar's wallpaper

There were 3 seating times for this special lunch so that the kitchen is not overwhelmed with trying to send out all the food all in one go.
It must be hard for the kitchen that day as people arrived at different time and at different stage of the courses as well. Despite how hectic the kitchen may be, it was not reflected in the service on the day. Everything runs smoothly and the service is as usual, courteous and prompt.

Degustation menu ; Freshly baked bread

There was an optional wine watching for the degustation at an additional cost. The bread was fresh out of the oven and it was warm and soft. Add a thick spread of cold butter , a sprinkle of sea salt and that's all it needs.

Ceviche of Crystal Bay Prawns & Jellyfish, Fennel, Thai Basil "Tiger's Milk"

The ceviche wass really nice, as this dish only depends on the lime juice to partially cook the prawns, it is quite raw still but has a nice crunch and sweetness. The jellyfish adds a nice texture to the dish, crunchy and gelatinous. I'm going to assume what the chef meant by "Tiger's Milk" is the emulsion of basil paste and the extra virgin olive oil. The emulsion is very creamy and I'm glad there is some acidity in the dish to cut it back.

Raw Trevally Rubber Lip Morwong, Preserved Lemon, Wakame, Lime, Dashi Vinaigrette, Roast Jalapeno Puree.

We were advised that since the chef was not able to find fresh Trevally in the market that morning, we are having the Rubber Lip Morwong instead.
It was dressed with a tangy dashi vinaigrette, mixed in with wakame and some crunchy bits (rice crackers ?). The fish was very fresh and sweet. The puree might look harmless but oh boy....looks can be deceiving, it is one deadly puree ! It was burning hot that I get dizzy eating it ...*whoaaa*
It however compliments the fish very well so I polished the puree off as well - with painful consequences afterwards - my face was burning and I had to gulp down 2 glasses of cold water  lol
My friend asked what was I thinking eating all of the jalapeno puree ? Good question 99...I don't know...
no pain no gain ?

Pouring consomme over the scampi

The waitress brought over the plates along with a small carafe containing the scampi consomme.
It is then poured into the plates on the table. The wafting aroma of the consomme as she was pouring is mouth watering.

New Zealand Scampi, Scampi Consomme, Lemongrass, Konbu & Scampi Oil

The scampi is tender and sweet, cooked perfectly. The consomme tasted as good as it smells, even better perhaps ! Scampi in flesh, consomme and essence in the form of scampi oil - scampi heaven....
It is the one dish that we just can't get enough off , we wished there was more of it :)

Roasted Sambal Skate Wing, Pickled Cucumber and Crispy Rice Ball

This dish reminds me of dishes back in Indonesia, the sambal's flavour is authentic and the heat is authentic too lol
Yep...this is another one that burns our tongue and mouth, my friend even find this sambal hotter than the jalapeno puree. The fish is perfectly cooked, despite it being a thinner slice of fillet, the flesh was still soft and melts in your mouth while the outer layer is crispy.

Chewy delicious Crispy Rice Ball

The fish is served with pickled cucumber, just like atjar - pickled vegetables commonly served as sides / condiments in Indonesian / Malaysian dish.
I love the crispy rice ball, glistening rice grains that are not mush and the skin is chewy like mochi.

While we were waiting for the dessert to come, the lady next to us said that out of the 4 courses we have had so far, this dish is her least favourite. She found that compared to the others delicate and clean flavours, this fish course has quite strong and bold flavours.
I agree that it is more bold in flavours, but I don't mind it at all. If anything, it makes me happy because they are the flavours that I am familiar with and reminds me of home :)

A peek at Chef Dan Hong busy in the kitchen

Please excuse the blurry picture as it is actually a reflection on the mirror hehehehehe...

Squid Ink Lemon Curd Ice Cream, Squid Ink Sable, Wakame & Elderflower Jelly

Very much looking forward to this course as it sounded weird and intriguing at the same time, squid ink and wakame as desserts ?!?
It is funny how the lady who chatted to me before and her partner actually watched me taking the first spoonful before tucking into theirs...*drumroll*.....
I turned and nod my head - it's okay to eat :D
I couldn't help but feeling like the guinea pig for a second there LOL
As weird as the flavour combinations may sound, they actually works well together, it was very good indeed.

You can barely taste the squid ink in the ice cream except for the black colour it gives, instead the flavour is that of the tangy lemon curd.
The squid ink sable comes in a crushed form like black sand where the ice cream is resting on.
Just like Oreo, not chocolate but squid ink :D Love the buttery flavour and the crispy texture.
The elderflower jelly is tangy and refreshing and compliments the richnesss of the ice cream and sable.

Now... what I think is the most interesting component of this dessert is...

Wakame

My thought was it can be a disaster since wakame is a slimy seaweed with very strong flavour of the sea, almost fishy at times.
To my amazement, the seaweed taste is barely noticable ! I wonder how did they do it ? Marinade it in syrup for a period of time maybe, as it is quite sweet and syrupy almost :)
This is one of the most interesting dish that I've had lately, loved it !

The Creatures of The Deep degustation lunch is a lovely experience. Interesting East meets West flavour combinations that works so well together.

Sushi-e ~ Merivale Feast for The Senses, Sydney CBD

Tonight our Feast of The Senses destination is Sushi - e @ Establishment.
Heard so much rave review about this japanese eatery so this is a great opportunity to see if it is really that good.

Hemmesphere

Sushi-e is located on the same level as the Hemmesphere lounge, pretty much side by side.
Although we made the booking for Sushi-e, we were seated in the Hemmesphere area on the plush sofas.
Good and bad about that : we got to dine sitting on comfy sofas but the lighting is much darker than in Sushi-e T___T

Hemmesphere Chandeliers

I've just got my hand on the Canon S90, apparently it's the best compact digicam to take photos in very low light condition, so tonight I left my jumbo camera at home and just bring this more compact one.
Although it does take better pictures in low light than my previous compact , still found it quite grainy.
Another leason learned....jumbo camera still the best at places with romantic lighting :P
Not quite discreet but takes less grainy shots.

Knowing that the portions will be small here, I opted for the 3 course options while the others stay with the 2 courses.

Complimentary Miso Soup

The miso soup is a tad different, it doesn't have a strong miso taste, and they used mitsuba (Japanese wild parsley) and abura-age (deep fried thin slices of tofu). I thought I tasted sansho (Japanese szechuan pepper) as well, could be wrong...but the smell is quite similar.

This time round, we managed to order everything on the entree options :

Soba Noodles with Roast Chicken Salad

My friend who couldn't eat raw fishes had this. It looked just like any normal soba chicken salad to me, not sure what it tasted like.

New Style Salmon Sashimi w/ Ponzu Dressing

I had a suspicion earlier that the "new style" would be similar to carpaccio, and I was correct :D
The sashimi is fresh and silky and the ponzu dressing is amazing !!
I was drowning each slice of the sashimi with the dressing to lap it all up.....I want more !

Spicy Scallop Sashimi Salad w/ Thai Style Dressing

Reading my friend's reaction after eating this, I think this was the winner of the 3 entrees.
The scallop was sweet and fresh, the dressing works really well with the raw scallop.
She was eating this oh so very slowly to savour each bite...LOL

Since I'm the only one who had an extra course, they serve it in between.
So I have to scoff it down very quickly since I know they won't bring out the other courses until I polish off my plate ( my friends are telling me to eat QUICK as they cannot wait any longer to get their mains LOL)

Hemmesphere Roll  Establishment Roll

I ordered the Hemmesphere Roll (salmon, avocado, baby capers, mixed cress, jalapeno mayo & spanish onions ) from the special menu.
I don't know how I end up with an Establishment Roll ! 0_o
As I was eating it, it did tasted wrong, but I never crossed my mind that they could possibly gave me the wrong one.
It's not until I got home and check the menu online that I know why it tasted odd.

My guess is that the girl who took our order key in the wrong thing as she didn't even write down what we ordered.
I'm surprised that a fine establishment like this could get orders wrong.
So not only I didn't get what I ordered, the roll itself was quite dissapointing. It's just like any other tuna, avocado, cucumber and mayo roll, nothing special. To make it worse, the rice was bland and mushy, soo wronggg !

Thankfully, after the very disappointing sushi roll, the mains made up for it.

Angus Striploin w/ Miso & Sesame

The beef was very tender and juicy, perfectly matched with the miso sesame dressing.
It was cooked perfectly, still a little bit pink in the middle :)

Grilled Miso Cod w/ Baby Ginger Root Pickled Daikon

The cod was soft and creamy as I expected, it was delicious !!
Missing the baby ginger root though, and it was replaced with some pickled daikon on the side.

Complimentary White Russian

It's a small tall glass of vanilla pannacotta topped with raspberry coulis. It has more of a thickened cream consistency than a pannacotta, but nonetheless it was very good and a perfect end to a lovely dinner (minus the sushi roll :P)

Mad Cow, Sydney CBD - Merivale Feast For The Senses

Mad Cow's Feast For The Senses Menu

This week's Merivale Feast For The Senses destination is....Mad Cow !!!
Time for some meat...mwahahaahahha ^o^

Steak Knife & Fork ; Wine Menu - Hi Cow !

I didn't took notice of the steak knife the last time I was here, has it always been oddly shaped like this ?
It's curved on the top and smooth..wonder if it serve a function ?

Almost everything here is white, with bits of yellow and green here and there :)

I love the decor here, only 3 basic colours are seen throughout the restaurant - white, green and yellow. White chairs and tables, green plants, and even the tulips on the tables are yellow tulips :)
The lighting however is very dim and cosy, perfect for romantic dinners but horror for those who loves to take photos of food T___T
We were seated in a much brighter table than my last visit, but a very steady hand is still required.
I wish I could dine here during lunch time, then there will be no issue whatsoever with lighting !

Sourdough and Soy & Linseed

I know...it's another bread shot...but the breads was fresh out of the oven, nothing beats warm fresh bread with cold butter...mmmmm....

Duck & Shiitake Mushroom Consomme with Spicy Duck Dumplings

The waitress did warn us that the serving of this dumpling entree is tiny - 2 dumpling tiny LOL
I didn't get to try it because I didn't want to deprave my friend, but the smell of the shiitake is intoxicating...hmmmm....

Grilled White Scallops w/ Salad of Coriander, Black Fungi, Bean Shoot, Ginger Black Bean Vinaigrette

The rest of us chose the scallops for our entree, and this was delicious !
The scallops is perfectly cooked, sweet and still slightly pink in the middle. The accompanying salad is the highlight , it is tangy and fresh and has a Vietnamese feel to it with the fish sauce and the other herbs. I wouldn't mind just having a bigger portion of this salad as is :)

Not too long after, we saw our waitress walking towards us with our steaks and we were ready with our knives and forks !
But lo and behold !!! A customer decided to take off his coat without looking behind him, so you can guess what happens next .... .CRASH !!!! Followed by the awkward silence....
To our horror...one of the 3 steak plates that the waitress was holding fell onto the floor with a loud crash  T____T
Since they can't serve the 2 "saved" plates to our table, they have to take it all back in and re-do the whole thing again - we were grieving for the wasted steak and our rumbling tummy....
Next time people...please be aware of your surrounding before you decide to take off your jacket so recklessly...grrrrrr.....

The maĆ®tre d' was apologetic and advised us that our steaks will be out shortly and we definitely did not have to wait too long for it *thank goodness*

Black Angus Minute of Fillet Steak, 200g, Diane Sauce

I'm not having much luck with meat photos tonight , obviously my hand is not steady enough for the low lighting LOL
There are 2 slices of the fillet steak in this dish , not sure how it tasted but it looks good :)

Rangers Valley Wagyu Flank Steak w/ Barbeque Sauce ( $5 Supplement)

There is a $5 supplement charge for the wagyu steak, and like my first visit's reaction on Mad Cow's steaks - is that all ?!?  LOL
It is just a little rectangular piece of meat, but it surprisingly fills you up by the end of the meal. Any bigger than that and we probably won't be able to finish it. The wagyu flank is cooked medium as recommended to allow best flavour release. It is juicy still, however I still prefer my steak to be medium rare, it is a bit too cooked for my liking.

With the standar a la carte steak dishes, they come with 2 sides of your choice to share with the table.
The Feast For The Senses steak dishes however doesn't come with any sides.
So the maĆ®tre d' did suggested to us in the beginning that perhaps we should order a couple of sides for the table.

Rosemary Garlic Fried Potato (Large)

Had this before and it was good so we ordered it again. We got the larger portion as there were 5 of us dining tonight.
The smell of rosemary & garlic is wafting from the crispy skinned and fluffy chat potatoes. Loving it :D

Creamed Spinach

The creamed spinach is lovely too, the spinach is silky and not too creamy at all.
Come to think of it...I think this is the first time I've ever had creamed spinach o_O
Wonder why....

Once again, a satisfying dinner at Mad Cow, the same friendly service and meat craving is satisfied, not to mention the pretty dining area too :D

View into The Ivy from Mad Cow

After we said goodbyes to the others, and as my friend was driving me home...both of us thought...something is missing....
DESSERT !!! LOL
We were actually quite full when we left MadCow, but 15minutes later we (I) was craving for sweets !!
(Told you I love my foods and sugar ! Hehehehee)

Was tossing around where to go for a quick dessert, some frozen yoghurt at Wow Cow perhaps ? Or drown ourself in chocolate at Max Brenner ? Hmm...tough choice....

Fratelli Fresh

But we found ourselves back at Cafe Sopra on Walsh Bay again !
I have been reading a lot on others blog that Cafe Sopra forbids photos of their food or their cafe for that matter to be taken. So I was very cautious and brace myself to be told off tonight  >__<
I was not aware of this "rule" when I was here last and was happily snapping away that time - I was lucky that I didn't get told off *pheww*

Who knows, these might be the last photos on Cafe Sopra on this blog :P

Chocolate Walnut Tart ; Buttermilk Pudding with Fresh Berries

The way the menu was written on the menu board (read : cramped), this is how I read it : Chocolate Walnut Tart with Sharpes Strawberries, Custard & Cream.
So you can imagine how disappointed I was when what came is a big plate with a slice of Chocolate Walnut Tart  -___-
I was laughing and crying on the inside.... LOL
There is an abundance of walnut in this tart and the chocolate creme was nice as well, although I think it is a bit dear to pay $14.50 for a slice of tart with nothing else, at least put something on the side, cream, ice cream or fruits or whatever, it was a bit lonely on the plate on its own...
I should have just ordered the Buttermilk Pudding like my friend did - there is more on the plate for the same price.
Oh well...I know better next time to read the menu carefully !
